Technological capabilities
- Ultra-high pressure homogenization (UHPH). For emulsions and encapsulation of bioactive materials and for microbial inactivation. Used in liquid and viscous products.
- High isostatic pressure (HHP): We have been pioneers in Spain in the application of this technology for food transformation and preservation.
- Ultraviolet C (UV-C) light, mainly for microbial inactivation, with pasteurizing equipment unique in Spain.
- Optical sensors for process control in the food industry. Unlike many groups, we do not use commercial spectrometers, we develop ad hoc sensors for online applications that do not yet have a suitable sensor.
- Electrospray: Dehydration of liquid foods using non-thermal technology.
- Systems for detecting/eliminating surface microorganisms and biofilms.
- Thermal sterilization treatments of UHT fluids and aseptic packaging in Tetra Brik.
- Development of gluten-free and gluten-free bakery products.
